Have you come across any specialty types of squash in your box yet? Summer is peak season for these beauties. The curved, bumpy one here is a crookneck squash and the gorgeous color-blocked one is a zephyr squash. Packed with potassium and vitamins A and C, you can treat both like you would zucchini and enjoy raw, sautéed, grilled, or baked.
The one that looks a little like a flying saucer? That’s a patty pan squash. Stout with a scalloped profile, you can simply trim the tough edges and cook them whole. They’re excellent sautéed, stuffed and baked (try making mini “pizzas” with them), or even pickled.
